Bacon wrapped stuffing bites
I've gone and done it again, but who cares, it's December and I've accepted I'm about to gain 20lb's, whatevz. Like I've said in the past, if there's something I like more than meat, it's meat wrapped in more meat and I've done just that, once again. Maybe you're wanting to impress your guests at Christmas this year with a fancy meaty side-dish or perhaps you're throwing a party and want to offer your hungry guests a bacon'y bitesize treat, these pork badboys will definitely put a smile on someones face, especially mine. So go crazy, you're all rockstars, pork rockstars. Here's how to make festive bacon wrapped stuffing bites.

250g of sausage meat
8 rashers of streaky bacon
3 cloves of garlic
30ml of Port
80g of cooked chestnuts
1/2 an apple, chopped into small cubes
1 teaspoon of sage, chopped
1 teaspoon of thyme, chopped
1 teaspoon of clear honey
1.) Preheat the oven to 180 degrees.
2.) In a mixing bowl add the sausage meat and all other ingredients apart from the streaky bacon and mix together well. Use your hands to firmly blend the spices with the sausage meat.
3.) Slice the 8 rashers of streaky bacon in half and set aside.
4.) Using your hands, take a small amount of the sausage meat mixture and roll into a golfball sized ball. Take one of the bacon rashers and tightly wrap the bacon around the sausage meat ball. Use your hands to evenly press the bacon around the stuffing ball. Once all 16 have been rolled, place in a roasting dish and cook for 30 minutes.
5.) Serve and enjoy.
