Caramelised red onion and goats cheese pizza

It's national pizza day. A fine reason to head on out to grab a slice or try and impress your mates by mocking up an elaborate rendition of Italy's best dish. In my case, my parents and their dog came up to London to visit me today so leftover meatballs and this homemade, thin olive and chilli crust with caramelised red onion, olive and goats cheese pizza was fresh on the menu. Naturally, my parents miniature schnauzer was most interested. Have the best weekend, you're all pizza-hero's in my eyes. Here's how to make a caramelised red onion and goats cheese pizza with an olive and chilli pizza dough base.

For the dough:

100g of strong white flour

70ml of warm water

8 black olives, sliced

2 teaspoons of chilli flakes

1 teaspoon of chives

1/2 teaspoon of salt

For the sauce:

100g of chopped tomatoes

1 teaspoon of freshly chopped basil

1 teaspoon of oregano

1/2 teaspoon of garlic salt

Splash of red wine (optional)

For the topping:

1 red onion, sliced

1 teaspoon of Muscovado sugar

1 teaspoon of honey

1 teaspoon of olive oil

1 teaspoon of balsamic vinegar

1/4 teaspoon of dried rosemary

8 olives, sliced

Fresh mozzarella (amount optional)

Grated mozzarella (amount optional)

Fresh goats cheese (optional)

Cracked black pepper

Fresh rocket



1.) In a mixing bowl, add the flour, sugar, salt, olives and chilli flakes and mix together well. Gradually add the water and begin mixing with your hands. Continue adding the water until you form a sticky dough. Dust your worktop with some plain flour and knead the dough for 10 minutes. Once kneaded, set aside.


2.) In a blender, add the chopped tomatoes, basil, oregano, garlic salt and splash of red wine and pulse for 10 seconds. Empty into a bowl or jug and set aside.


3.) In another saucepan, add the sliced red onion, honey, Muscovado sugar, dried rosemary, balsamic vinegar and olive oil and slowly sweat the onions on a simmering heat with a lid on the saucepan for about 10 minutes or until soft and sticky. Once cooked, set aside.

4.) Sprinkle some flour onto your work surface and begin working the dough out in a circular motion flattening and pushing outwards forming a pizza base. Once the pizza base has been formed, spread some of the tomato sauce over the pizza base and begin adding your toppings to your own preference. Once you have built your pizza, bake in the oven for 18-20 minutes or until the dough is crispy. Garnish with fresh rocket and cracked black pepper. Serve and enjoy!
