EASY no bake peanut butter power balls

SO, I am running a half marathon this Sunday. Yep, you heard that right, not as impressive as saying "I'm running a full marathon" but whatever, it's still long AF and has given me a legitimate excuse to mock up some tasty schnacks in attempt to keep me buzzing while I cry silently over heavy breathing. Anyway, for all you exercise loving folk out there, these guys will give you the burst of energy you need before any workout, not only are they bitesize and delicious, they are literally made my favourite way; in three easy steps. If everything was done in three easy steps, the world would be a much better place and on Sunday, there will be far more than three easy steps. Wish me luck friends. If I don't post anything next week it is because I have died, in which case, you are all welcome to storm my house in Brixton and help yourself to my kitchen. It's in my will.

TIME: 30 minutes MAKES: 12

INGREDIENTS:

100g of rolled oats

150g of peanut butter

100g of dried cranberries

30g of almonds

30g of coconut oil

2 tablespoons of water

2 tablespoons of oat milk

2 tablespoons of clear honey

1 teaspoon of vanilla extract

1/2 a teaspoon of salt

MAKE IT:

1.) In a food processor or blender, add ALL of the ingredients and blend for about a minute or until the mixture has blended together finely.

2.) Using a tablespoon, take a tablespoons amount of the mixture and roll into balls using your hands.

3.) Place on a tray or dish and cover with cling-film. Place in the fridge to set for 20 minutes. They'll solidify with slightly more time but are good to eat after 20 minutes. Perfect to have before exercise or generally as a delicious oat'y snack!
