Honey soy chicken super bowl

So I did it, I finished the half marathon in 1 hour and 48 minutes, didn't die and sadly none of you get to charge into myself and take all my stuff. I know how much you were all looking forward to that so I've tried my best to make it up to you in the form of another healthy spring recipe. I'm talking chicken, I'm talking sweet potato, I'm talking a sweet honey and soy dressing. All of the good stuff and it's yours. Have the best week folks!






TIME: 2 hours SERVES: 2




INGREDIENTS:


For the chicken:

2 chicken breasts

1/2 teaspoon of Chinese five spice

2 tablespoons of dark soy sauce

1/2 teaspoon of salt

Toasted sesame seeds, sprinkle

Chilli flakes, sprinkle

2 cloves of garlic

Drizzle of sesame oil


For the sweet potato:

1 medium sweet potato, diced

1/2 teaspoon of ground cinnamon

1/2 a teaspoon of fennel seeds

1 teaspoon of grated ginger


For the sauce:

1 teaspoon of clear honey

1 teaspoon of grated ginger

1 clove of garlic, chopped

2 tablespoons of dark soy sauce

1 medium spiced red chilli pepper, chopped

2 tablespoons of sesame oil

2 tablespoons of water


For the rest:

2 handfuls of curly lead kale

Handful of cashew nuts

Handful of cherry tomatoes

Tender stem broccoli

4 eggs, boiled




MAKE IT:


1.) In a mixing bowl combine the chicken breast with the spices, soy sauce, garlic, salt, sesame seeds and chilli flakes and mix together ensuring all of the chicken is coated. Cover with cling-film and marinade in the fridge for an hour.


2.) Pre-heat the oven to 180 degrees celsius. While the chicken marinades in the fridge, take the diced sweet potato and mix it together with the cinnamon, fennel seeds and grated ginger in a mixing bowl with a little olive oil. Add to a roasting dish and set aside.


3.) After an hour of marinading in the fridge, remove the chicken, empty into a roasting dish and bake in the oven for 40 minutes at 180 degrees celsius. After 20 minutes, add the sweet potato and at this point add the tender stem broccoli to the chicken roasting dish so it can soak up some of the marinade.


4.) While the chicken, broccoli and sweet potato cook, begin preparing the sauce. In a saucepan, add the sesame oil, ginger and garlic and sweat lightly for two minutes. Take the pan off the heat and add the soy sauce, honey and chilli and water and mix well.


5.) Remove the chicken, broccoli and sweet potato from the oven and begin building your super bowl. Add the kale, tomato's, boiled eggs and sweet potato followed by the chicken and broccoli. Drizzle the sauce over the top and garnish with chopped cashew nuts, chopped spring onions and chopped red and green chilli.
