iamchef's birthday breakfast burger

Today is all about me guys. And rightly so! Not just because I always like to be centre of attention, NO, that is just most days. Never forget — Today is important because I've only gone and turned a whole year older haven't I? That's right, today I turn the ripe old age of 29, and naturally, will treat myself to all the food and booze known to man while I hold back the tears from the grand realisation that I am anxiously stumbling into the final year of my twenties, is it really all downhill from here? Whatever, I'm kicking it off with this indulgent monster of a breakfast bap. A sticky Bourbon relish base with all the delicious essentials to a good English breakfast, piled up in a brioche bun, what more could you want on your birthday? Give it a try, if you make this breakfast delight for your partner on their birthday, someone is most definitely getting laid. Anyhoo, happy fucking birthday to me. Here's how to make my very own birthday breakfast burger.

TIME: 30 mins MAKES: 2


For the patty:

250g of minced pork

2 shallots, finely chopped

1 teaspoon of sage, dried or freshly chopped

1 teaspoon of parsley, dried or freshly chopped

10 grinds of pepper

1 teaspoon of salt

1 egg

For the relish:

2 red onions

1 shot of Bourbon (30ml)

2 teaspoons of HP brown sauce

1 teaspoon of Demerara sugar

The rest:

2 slices of black pudding

8 slices of streaky bacon

2 eggs, fried

2 tablespoons of maple syrup

2 brioche buns

1/2 an avocado, sliced


For the patty:

1.) In a bowl, mix the minced pork with the egg, shallots, spices and salt and massage together with your hands.

2.) Form into two patties, rub a little flour on each side, place on a plate and put in the refrigerator for 15 minutes.

3.) After 15 minutes, remove from the refrigerator and cook in an oiled pan for 6 minutes each side on a medium to high heat, pressing down on the burgers with a spatula regularly.

For the relish:

1.) Add the sliced red onion to a saucepan, drizzle a generous amount of olive oil and the sugar and cook on a medium to low heat with the lid on the saucepan to keep all moisture in. You want to really cook the onions down so they are nice and soft.

2.) Once the onions are soft and caramelised, add the Bourbon and HP sauce and mix together. Set aside.

For the rest:

1.) In the first frying pan, add a little vegetable oil and add the streaky bacon and cook on a medium heat, drizzle a small line of maple syrup over each piece in the pan while they cook, turn each piece over and repeat, cook to your bacon preference. In the second frying pan, add a knob of butter, melt it in the saucepan on a medium heat and then add the black pudding, cook on both sides for 4 minutes. In the third frying pan, simply fry two eggs. Set everything aside.

2.) Toast in the pan and butter your brioche buns before you begin building your burger. I have built mine by adding the relish first, then the patty, bacon, black pudding, fried egg and finally the sliced avocado. Build it however you like, it’s your birthday.
