Spicy air fryer falafel and buckwheat superbowl

You know what, falafel is great, delicious carby balls of love. They make any salad better and are always very welcome to gatecrash my salad party whatever day of the week it is. I'm throwing one this weekend, it's going to be wild. There will be chickpeas every where, I'm talking chickpea beer pong, chickepea cocktails, you name it, chickpeas are going to be dancing on the table and it's going to be excellent and you're all invited. BYOC and see you there. Here's how to make spicy air fryer falafel and throw it into a healthy buckwheat superbowl, the only superbowl I'm getting down and dirty with this weekend.

TIME: 1 hour SERVES: 2


For the falafel:

1 can of chickpeas in water (400g)

2 cloves of garlic

1 egg, beaten

1 teaspoon of ground cumin

1 teaspoon of hot cayenne pepper

1 teaspoon of dried ground coriander

1/4 teaspoon of salt

1/4 teaspoon of pepper

1 teaspoon of plain flour

2 tablespoons of olive oil

For the rest:

80g of buckwheat

1 avocado, sliced

1/4 red cabbage, sliced

1 handful of cherry tomatoes, sliced

8 tablespoons of greek yoghurt

1 clove of garlic, chopped

1 lemon, juiced

Fresh coriander, chopped

Mixed salad leaves


1.) Drain the chickpeas and add to a food processor or blender along with all of the falafel ingredients minus the egg. Pulse until the mixture is coarse, you don’t want the mixture too finely pulsed otherwise it will be too powdery. Once pulsed, empty into a mixing bowl and beat in the egg and mix through. Using your hands, roll into falafel balls, you should make roughly about 10 ping-pong sized balls. Once rolled, switch on your air fryer, set the temperature to 200 degrees celcius and air fry for 25 minutes.

2.) Bring a saucepan of water to the boil and add the buckwheat and cook for 12-15 minutes. While the buckwheat is cooking, begin preparing the dressing.

3.) For the yoghurt dressing, in a mixing bowl add the greek yoghurt and chopped garlic clove, add a pinch of salt and a generous helping of cracked black pepper. Add a teaspoon of dried mint and chopped coriander and squeeze the juice of half a lemon, mix together well.

4.) Mix a couple teaspoons of the lemon yoghurt dressing with the chopped cabbage and add a teaspoon of honey.

5.) Once the buckwheat has cooked, add a pinch of salt and pepper and mix in some chopped fresh coriander and set aside.

6.) Once the falafels have cooked, remove from the air fryer, they should be hard to the touch on the outside but will be softer on the inside. Begin building your superbowl in any way you like with all of your prepared ingredients. Drizzle with the lemon yoghurt dressing and serve!
