Strawberry Blondes (white chocolate brownies with strawberry cheesecake cashew milk)
Brownies are delicious aren't they? Yup, well recently I have set out on a quest to mock up some chewy, gooey brownies that don't harm our animal pals and I think I might have nailed it. Just maybe. Made with vegan white chocolate, strawberry cheesecake flavoured cashew milk and a whole bunch of dried strawberries and chopped cashews. Thus, the strawberry blonde was born. For all you sneaky redheads pretending to be blonde out there, this ones for you. Here's how to make vegan strawberry blondes.
TIME: 1 hour MAKES: 12 Blondies
300g of vegan white chocolate, chopped
50g of flax seed
200ml of Strawberry Cheesecake MYLKPLUS
250g of white caster sugar
150g of vegan butter
130g of plain flour
1 teaspoon of baking powder
1/2 teaspoon of kosher salt
50g candied strawberries, chopped
50g of unsalted cashews, chopped
1 teaspoon of vanilla extract
1.) Preheat the oven to 180 degrees celsius
2.) Melt the butter in a saucepan and pour over the chopped chocolate In a mixing bowl. Mix together until the chocolate has fully melted and becomes silky.
3.) In a separate bowl, mix the flax seed with the MYLKPLUS and leave for ten minutes to thicken (these will be your vegan eggs).
4.) Mix in the sugar and vanilla extract with the melted chocolate. Add in your vegan eggs and whisk well. At this point add the flour, baking powder, salt, candied strawberries, and cashews. Whisk together well and set aside.
5.) Line and butter a baking tray with greaseproof paper and empty the mixture into the baking tray, spread with a cake scraper evenly and sprinkle some chopped cashews over the top. Bake in the oven at 180 degrees celsius for 30 minutes.
6.) Remove from the oven and leave to cool on a cooling rack. before cutting into squares. These are easiest to cut into slices when entirely cool. I prefer to leave mine in the fridge overnight and cut in the morning.
