Vegan Avacado Mac and Cheese


It's thanksgiving over in the states and despite never actually having the honour of partaking, I have always been super envious of being able to have a celebratory dinner with lashings of mac 'n cheese and potato gratin, IT'S JUST NOT FAIR. So to alleviate the bitterness that has been wedged in my soul, I thought I would join my friends across the pond in a toast with this vegan avocado mac 'n cheese. Made with nutritional yeast to retain it's cheesy profile, you wouldn't believe it has absolutely 0% cheese. 0% CHEESE I TELL YA!






TIME: 45 Minutes SERVES: 2


INGREDIENTS:


300g of macaroni

100g of vegan margarine

50g of plain flour

1 litre of soya milk

1 medium sized avocado

6 sprigs of fresh thyme, finely chopped

6 cloves of garlic, finely chopped

4 spring onions, finely chopped

1 teaspoon of chives

1 teaspoon of oregano

1/2 a teaspoon of garlic salt

1/2 a teaspoon of salt

4 tablespoons of nutritional yeast (you can find this in most health food stores)

2 teaspoons of black pepper

50g of panko breadcrumbs


MAKE IT:


1.) Preheat the oven to 180 degrees.


2.) Sprinkle some sea salt into a saucepan of water and bring to the boil, add the macaroni and cook for 10 minutes on a medium heat, once cooked, strain and set aside.


3.) In a second saucepan, melt the margarine entirely and add the flour, gradually mixing it into a roux. Start beginning to add small amounts of the soya milk, mixing the roux together with it thoroughly until you have added all of the soya milk. Bring to the boil for 30 seconds continuously stirring, reduce to a low heat and simmer.


4.) Add the garlic, spring onions, thyme, chives, oregano, garlic salt, salt, nutritional yeast and ground black pepper and mix thoroughly then leave to simmer.


5.) In a mixing bowl, finely mash the avocado and then mix thoroughly into the sauce. Once the sauce has thickened after about 10 minutes of cooking, pour the sauce over the cooked macaroni and mix well.


6.) Empty the saucepan in to an oven dish and spread out flat and firmly. Finally, sprinkle the panko breadcrumbs evenly over the top of the mac n cheese and pop in the oven for 20-25 minutes, or until the top is a nice golden brown colour. Sprinkle with some roughly chopped thyme, serve and enjoy!
